The popular Vietnamese noodle soup, Pho, has become a major foodie phenomenon, especially in the United States. Do a Google search on the dish, and you’ll get more than 60 million results. In nearly every major city, the one-time Vietnamese street food has become a best-selling item on menus. Lucky Peach recently excerpted a portion from Andrea Nguyen’s forthcoming The Pho Cookbook on the history of the dish (it’s set for publication in February 2017 on Ten Speed Press).
